HEAVENLY SWEETS for the SWEET

Does baking consume much of your precious time supposedly for your kids? Well, let me bring a new way of making our favorite luscious cheesecake — bake-free!

This time let me share with you a new recipe of the blueberry with a twist. I personally call this as BLUEMERRY - Lemon Cheesecake and the other one is Mango-Peach Passion as these will surely make your heart merry and full of love. Let me start sharing what you need to make our unique cheesecakes hassle-free and bake-free.

BLUEMERRY-LEMON CHEESECAKE

Ingredients:

Crust:

  • 1 ¼ cups - Graham cracker crumbs
  • 1/3 cup - Melted Butter (unsalted)
  • 1 tsp - Lemon extract / rind
  • 2 tbsps - Sugar

Filling:

  • 1 pkg - Cream Cheese, softened
  • 1 cup - Yogurt (blueberry flavor otherwise, use original/plain)
  • ¼ cup - Sugar
  • 1 tbsp - Unflavored Gelatin, dissolved in
  • 3 tbsps - Fresh milk
  • 1 cup - All purpose cream, chilled
  • 1 tsp - lemon extract/ rind
  • 1 cup - Blueberries in syrup (or as desired)
  • 1 - Lemon fruit, sliced thinly

To make crust, mix crumbs with sugar, melted butter, and lemon extract. Press on a 9-inch pie plate or removable bottom pan. Chill.

For the filling, beat cream cheese, sugar, lemon extract and yogurt until light and well blended. Meanwhile, dissolve unflavored gelatin in milk over low heat and add to cream cheese while still hot. Continue beating to blend well. In a separate bowl, mix all purpose cream with the cream cheese mixture. Pour onto crumb - lined pan. Top with blueberries and sliced lemon. Chill for 4-6 hours. This can make 12 slices.


MANGO-PEACH PASSION

Ingredients:

Crust:

  • 1 ¼ cups - Graham cracker crumbs

  • 1 tsp - Lemon extract / rind
  • 2 tbsps - Sugar

Filling:

  • 1 pkg - Cream Cheese, softened
  • 1 cup - Yogurt (either mango or peach flavor otherwise, use original/plain)
  • ¼ cup - Sugar
  • 1 tbsp - Unflavored Gelatin, dissolved in
  • 3 tbsps - Fresh milk
  • 1 cup - All purpose cream, chilled
  • 1 tsp - lemon extract/ rind
  • ½ cup - Mango, sliced (or as desired)
  • ½ cup - Peaches, sliced (or as desired)
